Vegetarian Cooking

This was ridiculously easy to make AND it used barely any dishes either. Thats a win-win in my books.

I took the left over tofu from the recipe I made the other night and sliced it into chunks as you can see above. I brushed them with olive oil, sea salt and pepper and put them on my "grill". By grill I mean my mini George Forman grill, a single persons best friend!

I cooked the sweet potato fries (from frozen) in the toaster oven and then sliced red pepper, red onion (you can't see the onions but they are on the plate under the red pepper), and asparagus and put those on the grill once the tofu was browned on both sides. I put a little bit of garlic & herb salad dressing on the veggies to add a splash of flavour and help them grill a bit faster.

This meal was so delicious!!! The tofu was splendid when I took bites of the veggies and tofu together.

Cooking like this really makes me wish I had a boyfriend to share it with.

I mostly eat vegetarian and I love to cook too! But don't feel too sad, my boyfriend hates vegetables so he rarely eats anything I cook. Whatever, his loss lol...

That looks really good! Gotta get to Superstore for more tofu. I've never had the frozen sp fries, just made them from scratch.

I love your tags! That first one made me laugh. And the meal looks deelish - I have been trying to make a point to eat more tofu in my home life (I love it in restaurants but am kind of scared of it). This is encouraging me to just go ahead and dooooo it.

PS Natalie loves her mini George Foreman as well!

One day my dear, we both will have someone to share food with. In the meantime, let's have it all to ourselves : )
